This coffee was grown at high altitudes of 1,400 to 1,750 meters. The plant varietals of Caturra, Colombia-Castillo flourish in rich volcanic soil with high levels of organic matter. Processing was the washed process, it is 80% sundried and 20% mechanical drying (due to rainfall). 1) ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly.
